How to Join the (Seahawks Big Game!) Party and Still Eat Healthy {After Baby Un-Diet}

I really don’t think I need to even go into how freaking excited I am this week. And how I intentionally did not bring up the NFC Championship or our Super Bowl bound Seahawks last week so I could get my heart to stop beating so erratically and focus on my responsibilities for a few days before complete and utter distraction and infatuation over the possibility of the RE-PETE sets in. Clearly, that’s the space I am living in now.

And wouldn’t you know, this fits perfectly into the un-diet! It’s actually the most important part of it. I’ve declared my loath and complete rejection of strict diets, and the biggest reason is that I hate the idea of being a “cheater”. I don’t cheat on tests. I don’t cheat on my Rancher. I don’t even cheat on crossword puzzles. And my last name isn’t Belichick or Brady. Why on Earth would I willingly undertake an effort that when I eat food at a (Super Bowl!) party, there is anything negative, cheat-y or fail-y about it! Mindset people, mindset. If our Hawks aren’t the living, breathing, winning case for a healthy mindset, I don’t know what is.

So, here are the five easy things I will realistically get done this week as I obsess over Sunday:

+ I’m going to watch Chef Kirsten’s response to my video diary a few more times. This gal has maintained her over 100 lb. weight loss without skipping out on tailgate parties, celebrations, and Super Bowl Sunday feasts! She’s been making pre-game and family meals for Seahawks stars all season long. She’s on to something. Something awesome. Something healthy. And not to mention tasty.

+ Prep the Steak Baked Beans to take to our friends’ Super Bowl Party. Why? Because they are healthy and delicious, and I am a wee-bit superstitious. It’s what I made every weekend of the playoffs. It’s where we watched the Super Bowl last year. And seriously, if there was ever a time to add STEAK and homemade care to a classic party dish, I’m pretty sure a RE-PETE Super Bowl party is the time.

Healthy Homemade Steak Baked Beans by Chef Kirsten Helle

2 tsp healthy oil/fat of your choice
1 lb flank or sirloin steak, cut into ½” dice
2 slices bacon, chopped
1 onion, diced
1 bell pepper, seeded and diced
3 cloves garlic, minced
Salt and pepper to taste
1 Tb onion powder
1 Tb paprika
3 Tb maple syrup
2 Tb whole grain mustard
4 oz tomato sauce
1 can black beans, rinsed and drained
1 can kidney beans, rinsed and drained
½ cup broth

Preheat a large soup pot or deep skillet over medium high heat, when hot add oil, swirl to coat. Add the beef in one layer (do 2 batches if necessary) and brown on all sides. Remove to a plate and keep warm. Add the bacon to the pan and cook until crisp. Add the onion, bell pepper, garlic, salt and pepper, onion powder and paprika. Saute, stirring often, until the onion is translucent, about 8-10 minutes. Add the maple syrup, mustard, tomato sauce, beans, broth and beef back to the pan. Stir and bring to a simmer. Cook on low until the beef is cooked to your liking and tender. Serve on it’s own or scooped up with some tortilla chips and enjoy!

  1. Brilliant. Just freaking brilliant! We’ll be in “rock out with your Hawk out” mode over at the cousins. We always watch with the Schipper gang when it comes to big game weekends. And yes, I will be bringing a crock (though its a super boring plain, non-Hawk crock) filled with Cowboy Beef & Black Bean Chili. A kick of chili powder, dark beer and honey and this chili will rock our Hawks. #GoHawks #WeAre12

  2. Great looking recipe! If I was not traveling to Texas and attending a local super bowl party I would bring it along. My favorite tailgate recipes, with beef, are either meatballs for meatball sliders or (very unhealthy) ground beef + Velveeta + Rotell.

  3. I’ve been eyeing those Hawk Pots at Fred Meyer 🙂 I would make my granny’s favorite party dip. It’s cream cheese melted into chili in the slow cooker. It makes a tasty dip with Frito’s dippers or tortilla chips. We always had it at Super Bowl parties.

  4. I would make my mothers famous Barf Dip. It’s a hot beef dip we have only on special occasions, and is absolutely amazing! To be able to make it in the Seahawks crockpot would be awesome!!

  5. I would make some delicious crock pot pulled pork to make pulled pork sandwiches! Either that or a yummy chilly cheese dip or sweet and sour meatballs complete with pineapple! I love tailgate food! 🙂

  8. My boyfriend and I are going to a Superbowl party at his parents house, dressed in our best hawks gear of course! If I had this crockpot I would make cheese, beef, and onion stuffed biscuits. And Heather Christos slutty Seahawks brownies. I have to make one thing blue and green! 💙💚🏈 GO HAWKS!!!

  11. I say baby’s tattoo needs to be on the butt cheek or On his bicep :). So my family loves to do ribs and meet balls and smokies, but I usually make a Spicy White Bean Chicken Chili… It’s amazing with a big spicy kick!!! Go Hawks!!! B3LIEVE!!!

  12. I would be honored to win and cook in a hawks crockpot!!! I wanted one so bad for Christmas!!! But I would make my famous grape jelly meatballs!! They’re delish and super easy to thrown down on during the game!!

  13. I use my crock-pot almost every day; but for the big game it will be reserved for soup – as we do a “Souper Bowl” party and have everyone bring different soups to try – Go Hawks!

  14. Barbacoa Beef Street Tacos
    3 lbs chuck roast (fat trimmed), cut into 2-inch chunks
    4 cloves garlic, minced
    2 chiptoles in adobo sauce, chopped (or more to taste)
    1 small white onion, finely chopped (about 1 cup)
    1/4 cup fresh lime juice
    2 tablespoons apple cider vinegar
    3 bay leaves
    1 Tablespoon ground cumin
    1 Tablespoon dried Mexican oregano (or regular oregano)
    2 teaspoons salt
    1 teaspoon black pepper
    1/4 tsp ground cloves
    1/2 cup beef broth or water
    DIRECTIONS:

    Combine all ingredients in the bowl of a slow cooker. Toss gently to combine. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the beef is tender and falls apart easily when shredded with a fork.

    Using two forks, shred the beef into bite-sized pieces inside of the slow cooker. Toss the beef with the juices, then cover and let the barbacoa beef soak up the juices for an extra 10 minutes. Remove cover and use a pair of tongs or a slotted spoon to serve the barbacoa beef.
